FireWorks

FireWorks is named after the 25 foot brick-lined, wood-burning, fire-breathing beast that anchors our Fire Kitchen. It includes every form of live-fire cooking known to man, a smokehouse, open hearth, grill, rotisserie, plancha and wood oven. No dials, no switches, no gas, no power, just old-school fire cooking. Curious? Our Fire Brigade is always proud to share its details and flavours with you!

Restaurant

The Feast

Our chefs create a new menu daily using ingredients from our organic farm and herb gardens and from a roster of Prince Edward Island farmers, fisherfolk, foragers and culinary artisans. The evening begins at 6pm with our epic Oyster Hour, an interactive exploration of our whimsical grounds and gardens discovering our all-you-can-slurp Oyster Bar and the days flavours from our outdoor fire-pits, smokehouse and farm stands. At 7pm the Feast begins. It’s served family style to your and your guests at long butcher-block tables overlooking beautiful Bay Fortune. The menu includes freshly baked wood-oven bread, our taste-of the island charcuterie board, smoked fish, local seafood chowder, our famous organic salad and best of all wood roasted meats, fish and vegetables all prepared before your very eyes. Just make sure you save room for our delicious freshly baked desserts!

Oyster Hour

Join us every night at 6pm for a journey of discovery as you explore our kitchens, whimsical grounds, herb gardens and organic farm discovering an array of fire pits, flavours and drink stations. Every evening we also shuck through a pile of world-famous Colville Bay and Fortune Bay oysters in our famous historic kitchen, the original location of Chef Michael Smith’s debut cooking show, The Inn Chef. Wander into the Fire Kitchen and try a slab of hot-smoked salmon prepared in our smokehouse and while you’re there, start up a conversation with our chefs and see the FireWorks up close. While your at it enjoy a creative cocktail made from locally distilled spirits, a chilly beer brewed on Prince Edward Island or perhaps a cool glass of wine. You’ll meet new friends and start your evening in style!

Wine Library

Housed in our Wine Library is a carefully curated selection of wines from Canada and abroad personally chosen by Chef Michael to stand up to the wood-fired flavours of the feast.  Nestled inside, a semi-private feast table awaits where you can sit and unwind next to a wood-burning fireplace immersed in old-world charm.We also offer a selection of beers, ales and pilsners from Prince Edward Island, international wines and an ever-evolving cocktail list creatively mixed with locally distilled spirits.

The Fire Brigade

The FireWorks is an atelier, a workshop of young chefs devoted to rediscovering, respecting and reimagining the food ways of the past. Our passionate team of cooks and servers are just as ‘fired up’ about live-fire cooking and our farm as we are. Known as The Fire Brigade they’re the ‘Heart Of The House’ and their legendary hospitality lights up the Feast tables every night!

We’re committed to the small independent producers of our island and industry-leading compensation for our staff. We offer great value and a fair price that truly reflects the ingredients and passion we collectively bring to the table. You can expect an experience far beyond a normal restaurant meal!

The Fire Pits

During Oyster Hour you’ll have a chance to explore our grounds and discover a variety of fire pits and our wood lot. We burn a variety of island hard and soft woods and are constantly experimenting with new techniques from the world of live fire. Our Fire Brigade is not stopped by rain so dress accordingly for your voyage!

Our Farm

Farmers Jeff and Carey Wood are an integral part of our team. Every day their love of organic farming nourishes our soil, fills our harvest baskets and inspires our menu. We’re proud of their tireless efforts and the more than 200 different fruits and vegetables they produce every year. Our cooks help them on the farm every day. We grow 100% of the vegetables we serve including our amazing house salad. Every night it  features more than 50 different organic greens, tender shoots, leaves, herbs and flowers!

Fire Kitchen

Each evening, ‘The Feast’ is served on butcher block tables in the Fire Kitchen and Wine Library. You’ll enjoy watching the Fire Brigade working the FireWorks and crafting your dinner. Feel free to take lots of pictures and ask lots of questions. It’s an inspiring space, the heart-of-the-house and an experience you’ll never forget.

Cookbook Shop

We’re proud to offer signed copies of Chef Michael’s cookbooks and a small selection of fun souvenirs for his foodie fans. Michael is an accomplished artist, he’s designed several amazing T-shirts and drawn a series of illustration prints. His musician wife and fellow innkeeper Chastity is an artist too. Her decorating vision fills the Inn and she’s an amazing singer songwriter, you’ll find her CD in the gift shop.

Local Flavours

Long before local was trendy, Chef Michael Smith was helping pioneer the Canadian ‘Farm to Fork’ movement. Today he and The Inn at Bay Fortune team  remain firmly committed to showcasing the world class food products of Prince Edward Island. We farm, we forage, we forge relationships with a huge roster of culinary artisans across our island.

Foraging

We’re proud to feature a wide variety of Island ingredients that we source from the fields, forests, streams and beaches. We’re surrounded by wild food and love sharing these unique heritage flavours with our guests. What’s old is new again!

Our Breakfast

There’s no better way to start your day than with breakfast cooked over open fire. You can expect uniquely creative breakfast classics, fresh squeezed orange juice, all-natural smoothies, French-pressed locally roasted coffee, our famous homemade bacon and freshly baked flavours from our wood oven. We enjoy surprising you with delicious flavours well beyond the ordinary!

Dietary Restrictions

Due to the unique and ever changing nature of our farm the feast menu is not set in advance. If there’s something you can’t eat, please let us know when you make your reservation so we can do our very best to accommodate. Gluten free? No problem! Dairy intolerance? Can do. Vegetarian? The Feast heavily features the livestock, fowl and fish of Prince Edward Island but you’re welcome to join us, our farm and gardens are epic. With so many different ingredients and ideas, you’ll find lots to enjoy!
